Serves 4 | Ready in 30 minutes

Ingredients:

  • 1 lb TTCo Bison Ancestral Blend

  • 2 tbsp olive oil or tallow

  • 1 medium sweet potato, diced

  • ½ red onion, chopped

  • 1 red bell pepper, diced

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • Salt & cracked pepper to taste

  • 4 farm eggs (optional, for topping)

  • Fresh parsley for garnish

Directions:

  1. Heat oil in a cast-iron skillet over medium-high heat.

  2. Add sweet potatoes and cook until golden, about 8 minutes.


  3. Add onion and pepper; sauté until softened.

  4. Push veggies to one side, add Bison Ancestral Blend, and brown fully.

  5. Stir everything together with paprika, salt, and pepper.


  6. (Optional) Make small wells and crack in eggs; cover until cooked to your liking.


  7. Garnish with parsley and serve hot.
