Bison brisket is a barbecue classic, leaner than beef but full of bold, satisfying flavor. Cut Options:

  • Whole Packer Brisket (~7–10 lb): The full brisket, combining both the point and flat. Ideal for large barbecue cooks, competitions, or slow-smoking to feed a crowd.
  • Brisket Point (~3.5–4 lb): The marbled, flavor-packed end of the brisket. Perfect for burnt ends or shredding into juicy barbecue.
  • Brisket Flat (~3–4 lb): The leaner, more uniform end. Best for slicing, oven roasting, or smoking when presentation matters.
